Ratatouille Zucchini Boats
1 onion
1 eggplant
1 yellow squash
1 zucchini
5 tomatoes
3 cloves garlic
For boats – 6 whole zucchinis make 12 boats
Directions:
Pour olive oil in a large pot. Over medium/high heat sauté garlic and onions briefly till aromatic.
Add eggplant and cook until softened and brown.
Add yellow squash, zucchini and tomatoes to mixture and reduce to simmer.
When vegetables are cooked through, top zucchini with cooked ratatouille. (Cut zucchini in half lengthwise and scoop out the inside to form boat shape.
Bake boat at 400 degrees for 15 minutes or until the boat has softened and the tops are starting to brown.
Optional: add mushrooms and/or peppers
